Soft and delicious vegan trail mix cookies are packed with candy-coated chocolate, peanuts, and raisins.
In a small bowl combine the flax seeds and water and set aside.
In a large bowl beat together the butter and sugar with an electric mixer until creamy. Add the flax and vanilla and beat for a few more seconds.
Add the flour, salt, and baking soda and mix until everything is incorporated and a dough begins to form (It might appear slightly crumbly at first, but it should easily hold it’s shape when pressed together). Mix in the chocolate, raisins, and peanuts.
Roll the dough into one inch balls and place them on a parchment-lined baking sheet. Refrigerate them for one hour.
Preheat oven to 350 degrees. Bake the cookies for 10-12 minutes or until the bottoms of them are just slightly golden. Leave to cookies on the pan and allow them to cool for 30 mins.
