The other day I was craving something sweet and chocolatey. Obviously, there are tons of amazing vegan desserts that meet that description. Being vegan doesn’t mean you have to deprive yourself of delicious food. I could have made cupcakes, cookies, or even popsicles. However, I didn’t want to spend a lot of time in the kitchen or end up with a lot of leftovers. That’s when I came up with the idea of making mug brownies.

Mug Brownies are single-serving chocolate-packed treats that are baked in the microwave.
That’s right, the microwave.
Best of all they are super fast to make and you won’t end up with a bunch of dirty dishes.
How To Make The Best Vegan Mug Brownie
To make these vegan brownies start by adding the flour, sugar, cocoa powder, salt, and baking powder to a microwave-safe mug. Use a fork to toughly mix everything together.
Next, pour in the applesauce, melted oil, and vanilla extract. Mix again, making sure that the ingredients at the bottom are being incorporated, but don’t over mix your batter. Add the chocolate chips and give it another stir so that they are evenly distributed. Sprinkle a couple more chocolate chips on top and then pop it into the microwave.
Let the brownies cool for a minute or two and then dig in. They are extra delicious if you top them with dairy free vanilla ice cream.

The Secret Ingredient
Applesauce! That’s right applesauce. It helps to keep your brownies moist without the need for extra oil. Don’t worry, your brownies won’t taste like apples.
Do They Taste Like Coconuts?
It depends on what kind of coconut oil you use. Refined coconut oil is basically flavorless. Unrefined coconut oil will give your brownies a coconut. Either verity will work just fine for this recipe, so it’s just up to your personal preference.

- Where can I buy vegan chocolate chips? Most health food stores and even many grocery stores carry vegan chocolate chips. Often times they aren’t labeled as “vegan”, but several of the popular brands of semi-sweet are vegan. I usually use either Enjoy Life or Guittard semi-sweet chips.

Ingredients
- 3 Tbsp sugar
- 1 1/2 Tbsp unsweetened cocoa powder
- 2 Tbsp all-purpose flour
- a pinch of salt
- a pinch of baking powder
- 1 Tbsp melted coconut oil
- 2 Tbsp unsweetened applesauce
- 1/4 tsp vanilla extract
- 1 Tbsp mini vegan chocolate chips
Instructions
In a microwave save mug mix together the sugar, cocoa powder, flour, salt, and powder. Add the coconut oil, applesauce, and vanilla extract. Make sure the dry ingredients at the bottom of the mug get mixed. Next, add the chocolate chips and mix again. Sprinkle a few more chocolate chips on top (optional).
Microwave on high for 90 seconds or until a toothpick inserted in the middle comes out clean.
Allow it to cool slightly.
