Vegan Sweet Potato Cheese Sauce

The cold and wet days of winter are here. It’s definitely the time of year to fill up on a nice warm hearty meal! That’s where this macaroni with vegan sweet potato cheese sauce comes in.

Easy stretchy non dairy cheese sauce made from sweet potatoes tapioca flour, and nutritional yeast.

Sometimes you just need some comfort food.

When it comes to comfort food, pasta is definitely at the top of my list, with mac and cheese basically being the pinnacle.

A pot full of quick and easy vegan mac and cheese.

Being vegan doesn’t mean you have to give up mac and cheese!

This vegan cheese sauce is

  • Gooey
  • Cheesy
  • Delicious

and best of all it’s super simple to make!

In fact, with just 10 mins and 10 ingredients, you can make some amazing sweet potato cheese sauce.

What Vegan Sweet Potato Cheese Sauce Made Of?

This dairy-free cheese sauce is made out of vegan butter or olive oil (I used Earth Balance), almond milk, garlic and onion powder, paprika, sweet potatoes, nutritional yeast, salt, and tapioca flour.

What is tapioca flour?

Tapioca flour, also called tapioca starch, is a thickening agent like corn starch or flour. However, unlike other thickeners, it gives sauces a unique stretchy cheese-like texture. It’s my secret ingredient to making a convincing mac and cheese consistency.

Why canned sweet potatoes?

For this recipe, I used canned sweet potatoes because I wanted this to be a quick meal that could be made in only a few minutes. Alternatively, you can replace them with boiled or steamed sweet potatoes.

To make the cheese sauce simply blend the ingredients together and then bring them to a boil. Mix the sauce into your noodles and enjoy!

Description

Easy, cheesy, and tasty vegan macaroni and cheese.


Ingredients

Scale

2 Cups almond milk

2/3 Cup canned sweet potato drained and rinsed

2/3 Cup nutritional yeast

2 Tbsp tapioca flour (also called tapioca starch)

1 1/2 tsp salt

1/2 tsp garlic powder

1/2 tsp onion powder

1/4 tsp turmeric

1/4 tsp smoked paprika

2 Tbsp vegan butter or olive oil

16 oz box elbow macaroni


Instructions

Cook the macaroni according to the directions on the box. While it’s cooking make the sauce.

Blend the almond milk, sweet potatoes, yeast, tapioca, vegan butter, and spices together until smooth. Transfer to a medium saucepan and bring to a boil. Reduce to low heat. 

Once the pasta is ready, mix in the sauce.

      Hi Jessica,
      You could also use cooked sweet potatoes. Using canned cuts down on cook time.
