This easy vegan black rice pudding is smooth, creamy, and delicious. It’s a twist on the classic dessert.

Rice pudding may not be as exciting as some other desserts, but it’s a true classic and one of the all-time best comfort foods. This simple vegan one-pot recipe will give you a creamy dairy-free treat that’s both delicious and easy to make.

The addition of black rice makes this pudding visually stunning and loaded with antioxidants!

What Is Rice Pudding?

Rice pudding is a creamy, thick, sweet dessert made from cooking rice until it is very tender. It’s typically served chilled with raisins, vanilla, and a dash of cinnamon incorporated into it.

What Is Black Rice?

Black rice is the name for a group of different dark-colored kinds of rice. There are both short and long grain varieties. Sometimes black rice is called purple rice since the color is technically a very deep purple instead of a true black.

The taste and texture are similar to brown rice.

Is Wild Rice The Same Thing As Black Rice?

No. Wild rice is the seed of an aquatic grass and isn’t actually a rice at all.

How Do You Make Vegan Black Rice Pudding?

Begin by cooking the dried rice in a large pot with the water just like you would if you were making a side of rice. Once the water is boiling reduce the heat to low and cover it with a lid. Cook the rice for 20 minutes or until it is tender.

Remove the pot from the heat and add the maple syrup and coconut milk. You don’t want the starch that’s coating the bottom of the pan to burn, so you’ll need to dissolve it in the coconut milk. To do this whisk the mixture for about a minute making sure you stir every area in the pot.

Return the pot to the heat and stir it occasionally. Let it continue to simmer for another 30 minutes or until it reaches your desired thickness.

FAQ And Tips For Making Vegan Black Rice Pudding

  • Can I use leftover cooked rice? Yes, just skip straight to letting it simmer in the coconut milk.
  • Should I use long-grain or short-grain rice? You can use either. Short-grain will cook a little faster and end up a little softer. Long-grain rice takes a little longer to cook and retains it’s structure better.

Description

A sweet and creamy vegan pudding made with black rice and coconut milk.


Ingredients

Scale
  • 1/2 Cup long grain black rice
  • 1 Cup water
  • Pinch of salt
  • 13.5oz Coconut milk
  • 1/2 Cup maple syrup
  • 1/2 tsp vanilla extra
  • 2 Tbsp dried cherries or rasins (optional)

Instructions

Add the rice, water, and pinch of salt to a large pot and heat it over medium until it comes to a boil.  Reduce the heat to a simmer and cover the pot.  Continue cooking until the rice is thoughly cooked, about 20 minutes.

Remove the pot from the burner and mix in the coconut milk and maple syrup. Whisk the mixture thoughly for one minute to stir in any starch that might be stuck to the bottom of the pan.

Return the pot to the burn and let it simmer uncovered for another 20-30 minutes or until it reaches your desired thickness.

Remove the pot from the heat and stir in the vanilla extract and dried fruit.

Sereve warm or cold.
