Cinnamon Spiced Vegan Cereal And Nut Bars

Looking for an easy to make flavorful snack you can eat on the go? Look no farther! These spiced cereal bars are super simple to make and are packed with candied ginger, cinnamon, cardamom, and nutmeg!

There are a lot of amazing and satisfying bars on the market. Clif bars and No Cow bars are few on my favorites. But did you know it’s really easy to make your own?

Like ridiculously easy!

It’s also a much more budget friendly option since those store bought ones can be pretty pricey.

Holiday Spiced Nuts In A Bar

This recipe is based off of the holiday classic. They are spiced with warming aromatic spices like cinnamon, cardamom, and nutmeg.

However, they would be great any time of year.

Nuts

For this recipe, you can use any kind of nuts or a combination of different verities. Larger seeds like sunflower seeds or pepitas also work well. I personally prefer to use more neutral-flavored nuts, like almonds, for these bars.

Spices

To avoid losing flavor buy whole spices and grate them yourself. Always store your spices in a dry dark space.

Candied Ginger

Also called crystallized ginger, candied ginger is ginger that has been peeled, chopped, and then cooked in simple syrup. It has a soft chewy texture like that of dried fruit and adds nice little pockets of ginger flavor to these bars.

Brown Rice Syrup

Brown rice syrup is a thick liquid sweetener, with a honey-like consistency, made from brown rice. You can find it at most health food stores or you can replace it with corn syrup.

Puffed Rice Cereal

The best known puffed rice is the brand name Rice Krispies cereal. However, there are many brands of puffed rice cereal and any of them will work just fine.

Description

Vegan holiday spiced nuts in bar form.


Ingredients

Scale
  • 3 Cups nuts or seeds any combination
  • 3 Cups puffed rice cereal
  • 1/4 Cup candied ginger minced
  • 1 Cup brown rice syrup or light corn syrup
  • 3/4 Cup sugar
  • 1 tbsp coconut oil
  • 1 tsp salt
  • 2 tsp cinnamon
  • 1 tsp cardamom
  • 1 tsp nutmeg
  • 1 tsp vanilla extract

Instructions

  1. Line a 9×13 pan with parchment paper.
  2. In a large bowl mix together the nuts, cereal, and ginger.
  3. In a small saucepan over medium-high heat combine the brown rice syrup and sugar. Stir continuously until boiling.
  4. Add the spices, salt, vanilla, and oil.
  5. Let boil for a full minute.
  6. Pour the sugar mixture over the cereal and nuts and stir until well combined.
  7. Spread evenly over the 9×13 pan and let cool for about an hour.
