I LOVE pumpkin!
I think I could eat it every day.
I know pumpkin spice is pretty trendy now (and so are over night oats), but I think it’s totally justified.
Overnight oats are pretty much the fastest and easiest breakfast possible, not to mention cheaper than instant oatmeal packets.
I have to get up incredibly early for work and I’m a huge fan of the snooze button. It’s not uncommon for me to be rushing out the door without enough time to make breakfast.
Which is why I’m so fond of overnight oats.
Just mix everything together the night before and forget about it until morning.
Use a jar instead of a bowl for a convenient grab and go breakfast.

Pumpkin Spice Overnight oats

Ingredients
- 1/2 Cup Old Fashioned Oatmeal
- 1/2 Cup Almond Milk
- 2 tbsp Pumpkin Puree
- 1 tbsp Chia Seeds
- 1 tsp Vanilla Extract
- 1 tsp Molasses
- 1/4 tsp Pumpkin Spice
Instructions
- Mix all ingredients in a bowl or jar and store in the refrigerator over night.
