Lentil and rice casseroles are very easy to make. Simply mix all of the dry ingredients together on your day off. Store in an airtight container until you’re ready to make it.
It does take a while to cook, but it’s very hands-off. There’s no sauteing or chopping tons of ingredients. Just mix everything together, spread it across a baking dish, cover it with foil, and pop it in the oven.
What If I Don’t Have Dehydrated Vegetables?
You don’t need to add dehydrated vegetables. They are a nice addition if you’re planning on preparing ahead of time, but you can replace them with some freshly chopped vegetables that you add right before you bake it or omit them entirely.

This Moroccan inspired dinner has a touch of both sweet and savory. It’s incredibly easy to make and very budget friendly.
1 cup brown lentils
1 cup golden raisins
2/3 cup brown rice
2 tsp cumin
1 tsp cinnamon
1 tsp dehydrated vegetables (optional)
1/2 tsp dried orange peel
1/2 tsp garlic powder
1/2 tsp salt
3 1/2 cup low sodium V-8
1/4 cup chopped fresh mint (optional)
Preheat oven to 300 degrees Fahrenheit Combine the lentils, raisins, rice, cumin, cinnamon, vegetables, orange peel, garlic powder, and salt in a 9 x 13 baking pan. Cover the mixture with V-8 juice. Cover the pan with aluminum foil and bake for 95 mins. Allow the casserole cool for a few minutes and then top with mint.
