Don’t let the simplicity of this dish fool you. It’s packed with amazing flavor combinations of cumin, cinnamon, orange, and mint.
It’s both sweet from the raisins and savory from the tomato juice.
Best of all, this recipe can be prepped in advance!
Simply mix all of the dry ingredients together on your day off. Store in an airtight container until you’re ready to make it.
It does take a while to cook, but it’s very hands off. There is no sauteing or chopping tons of ingredients. Just mix everything together and pop it in the oven.

This Moroccan inspired dinner has a touch of both sweet and savory. It’s incredibly easy to make and very budget friendly.
1 cup brown lentils
1 cup golden raisins
2/3 cup brown rice
2 tsp cumin
1 tsp cinnamon
1 tsp dehydrated vegetables (optional)
1/2 tsp dried orange peel
1/2 tsp garlic powder
1/2 tsp salt
3 1/2 cup low sodium V-8
1/4 cup chopped mint
Preheat oven to 300 degrees Fahrenheit Combine the lentils, raisins, rice, cumin, cinnamon, vegetables, orange peel, garlic powder, and salt in a 9 x 13 baking pan. Cover the mixture with V-8 juice. Cover the pan with aluminum foil and bake for 95 mins. Allow the casserole cool for a few minutes and then top with mint.
