Description
This Moroccan inspired dinner has a touch of both sweet and savory. It’s incredibly easy to make and very budget friendly.
Ingredients
1 cup brown lentils
1 cup golden raisins
2/3 cup brown rice
2 tsp cumin
1 tsp cinnamon
1 tsp dehydrated vegetables (optional)
1/2 tsp dried orange peel
1/2 tsp garlic powder
1/2 tsp salt
3 1/2 cup low sodium V-8
1/4 cup chopped fresh mint (optional)
Instructions
Preheat oven to 300 degrees Fahrenheit Combine the lentils, raisins, rice, cumin, cinnamon, vegetables, orange peel, garlic powder, and salt in a 9 x 13 baking pan. Cover the mixture with V-8 juice. Cover the pan with aluminum foil and bake for 95 mins. Allow the casserole cool for a few minutes and then top with mint.
