Vegan Lemon Coconut Energy Bites

These lemon and coconut-infused vegan energy bites are the perfect satisfying snack.

It’s easy to eat junk when you’re ravenously hungry.  That’s why having good quick snack options on hand is key to sticking to a healthy diet.  These tasty lemon coconut vegan energy balls are a perfect option.

What Are Energy Bites?

Energy bites are healthy little bites sized snacks. Typically made from whole foods and free from processed ingredients. They’re sweetened with natural sugar, often from date, to give you a little boost of energy. And also contain a helping of healthy fats, fiber, and protein from nuts and seeds. It’s not uncommon for bites to be made with oats or nut butters.

This energy bite recipe is made with flax and chia seeds for omega-3 as well as lemon, coconut, and poppy seeds for a ton of flavor. It’s also gluten and grain-free. Each serving is packed with 9 grams for plant-based protein!

How Do You Make Vegan Energy Bites?

These energy bites only take a couple of minutes to make and best of all they don’t require any cooking.

To make them, simply add the nuts, seeds, and coconut to a food processor and pulse until they are finely chopped. Then add the dates, zest, and lemon juice and blend until the mixture forms a dough. Shape the dough into bite sizes balls and refrigerate them until they become firm.

Can You Make Energy Bites Ahead Of Time?

Absolutely! These bites can last up to a week in the refrigerator. So you can make a batch on the weekend and snack on them throughout the week.

Description

A quick snack full of protein and healthy fats to help keep you full.


Ingredients

Scale
  • 1 Cup Walnuts
  • 1/3 Cup Chia Seeds
  • 1/3 Cup Ground Flax
  • 1/3 Cup Hemp Seeds
  • 1/3 Cup Sunflower Seeds
  • 1/3 Cup Unsweetened Shredded Coconut
  • 1 Cup Dates
  • 1 tbsp Poppy Seeds
  • Juice And Zest Of One Lemon
  • 2 tbsp Unsweetened Shredded Coconut (optional)

Instructions

  1. Add dry ingredients to food processor and pulse until finely ground
  2. Add dates, zest, and lemon juice and process until everything starts to stick together.
  3. Form into one inch balls.
  4. (optional) Roll in shredded coconut

Notes

Store in the refrigerator for up to one week.
