How Do You Make Vegan Energy Bites?
These energy bites only take a couple of minutes to make and best of all they don’t require any cooking.
To make them, simply add the nuts, seeds, and coconut to a food processor and pulse until they are finely chopped. Then add the dates, zest, and lemon juice and blend until the mixture forms a dough. Shape the dough into bite sizes balls and refrigerate them until they become firm.
Can You Make Energy Bites Ahead Of Time?
Absolutely! These bites can last up to a week in the refrigerator. So you can make a batch on the weekend and snack on them throughout the week.

Ingredients
- 1 Cup Walnuts
- 1/3 Cup Chia Seeds
- 1/3 Cup Ground Flax
- 1/3 Cup Hemp Seeds
- 1/3 Cup Sunflower Seeds
- 1/3 Cup Unsweetened Shredded Coconut
- 1 Cup Dates
- 1 tbsp Poppy Seeds
- Juice And Zest Of One Lemon
- 2 tbsp Unsweetened Shredded Coconut (optional)
Instructions
- Add dry ingredients to food processor and pulse until finely ground
- Add dates, zest, and lemon juice and process until everything starts to stick together.
- Form into one inch balls.
- (optional) Roll in shredded coconut

Store in the refrigerator for up to one week.
