Sometimes you need a quick indulgent dessert! That’s where these simple vegan chocolate cherry cupcakes come in.

Vegan Chocolate Cherry Cupcakes made with cake mix

Baking vegan cupcakes doesn’t have to be daunting or complicated thanks to this simple hack.

Easy Vegan Cupcake Hack

As crazy as it sounds all you need to make them is a box of cake mix and a can of some kind of carbonated drink. That’s it!

Simply mix them together, top with pie cherries, and then bake following the directions on the cake box.

Once they’re cool you can frost them or top them with vegan whipped cream.

FAQ And Tips For Making Vegan Chocolate Cherry Cupcakes

  • Where can I buy a box of vegan cake mix? While there are specifically vegan cake mixes they aren’t always easy to find. Thankfully many readily available cake mixes are accidentally vegan. For these chocolate cherry cupcakes, I used Duncan Hines Classic Devil’s Food Cake Mix.
  • Could I use soda instead of seltzer? Absolutely! I used a can of Polar Black Cherry seltzer, but it could be replaced with any cherry-flavored carbonated beverage.
  • Do I need to add oil? Nope, not with this recipe. They’ll turn out just fine without it although the texture is a little more light and airy than traditional homemade cupcakes.
