As crazy as it sounds all you need to make them is a box of cake mix and a can of some kind of carbonated drink. That’s it!
Simply mix them together, top with pie cherries, and then bake following the directions on the cake box.
Once they’re cool you can frost them or top them with vegan whipped cream.

- Where can I buy a box of vegan cake mix? While there are specifically vegan cake mixes they aren’t always easy to find. Thankfully many readily available cake mixes are accidentally vegan. For these chocolate cherry cupcakes, I used Duncan Hines Classic Devil’s Food Cake Mix.
- Could I use soda instead of seltzer? Absolutely! I used a can of Polar Black Cherry seltzer, but it could be replaced with any cherry-flavored carbonated beverage.
- Do I need to add oil? Nope, not with this recipe. They’ll turn out just fine without it although the texture is a little more light and airy than traditional homemade cupcakes.

Description
Super easy chocolate and cherry vegan cupcakes.
Ingredients
12oz Can of black cherry flavored seltzer
1/2 Cup vegan butter (I used Earth Balance)
3 1/2 Cup powdered sugar
1 1/2 tsp vanilla extract
1/4 Cup liquid from pie cherry can
Instructions
Combine the cake mix and the seltzer. Spoon the mixture into a lined cupcake pan. Place a pie cherry on top of each cupcake.
Follow the baking direction on the cake mix. Allow to cool before frosting.
For frosting: beat the vegan butter, powdered sugar, vanilla, and pie cherry liquid together until well combined, about 3 mins.
Top each cupcake with a cherry.
