Baking vegan cupcakes
As crazy as it sounds all you need to make them is a box of cake mix and a can of some kind of carbonated drink.
Thankfully many readily available cake mixes are accidentally vegan.
For these chocolate cherry cupcakes, I used Duncan Hines Classic Devil’s Food Cake Mix and a can of Polar Black Cherry seltzer.
Simply mix them together, top with a pie cherry, and then bake following the directions on the cake box.
Once they’re cool you can frost them or top them with vegan whipped cream.Print
Super easy chocolate and cherry vegan cupcakes.
1/2 Cup vegan butter (I used Earth Balance)
3 1/2 Cup powdered sugar
1 1/2 tsp vanilla extract
1/4 Cup liquid from pie cherry can
Combine the cake mix and the seltzer. Spoon the mixture into a lined cupcake pan. Place a pie cherry on top of each cupcake.
Follow the baking direction on the cake mix. Allow to cool before frosting.
For frosting: beat the vegan butter, powdered sugar, vanilla, and pie cherry liquid together until well combined, about 3 mins.
Top each cupcake with a cherry.
